The main uses of honey are in cooking, baking, spreading on bread or toast, and as an addition to various beverages such as tea. Because honey is hygroscopic (drawing moisture from the air), a small quantity of honey added to a pastry recipe will retard staling. Raw honey also contains enzymes that help in its digestion, several vitamins and antioxidants.

Honey is the main ingredient in the alcoholic beverage mead, which is also known as honey wine, and methelgin. Honey is used in traditional folk medicine and apitherapy, and is an excellent natural preservative.

Without commercial beekeeping, large-scale fruit and vegetable farming and some of the seed industry would be incapable of sustaining themselves, since many crops are pollinated by migratory beekeepers who contract their bees for that purpose.

In ancient history, the Egyptians and Middle-Eastern people also used honey for embalming the dead. However only rich and powerful people had the luxury of this type of funeral.tritional Information on Honey.

Propolis is marketed by health food stores as a traditional medicine, and for its claimed beneficial effect on human health. It shows powerful local antibiotic and antifungal properties. Also it is efficient in treating skin burns. Claims have been made for its use in treating allergy; it may stimulate the immune system, but some warn that it should not be taken if the user is likely to have severe allergic reaction to bees. Old beekeepers recommend a piece of propolis kept in the mouth as a remedy for a sore throat.

Propolis has approximately 50 constituents, primarily resins and vegetable balsams (50%), waxes (30%), essential oils (10%), and pollen (5%). Propolis is sticky at and above room temperature. At lower temperatures it becomes hard and very brittle.
